Chef Kick Recipe
Fish Tacos
1 lb tilapia, sole or flounder
3 Tablespoons chili powder or Cajun seasoning
Hard or soft taco shells
3 cups fresh salsa
1 cup shredded carrots
1. Preheat oven to 425°.
2. Line a cookie sheet with parchment paper.
3. Lay fish fillets on parchment in a single layer
4. Sprinkle the fillets with seasoning.
5. Bake fish for 8 minutes or until just cooked through
Serve with salsa, tortillas and shredded cabbage
* Firm tofu can be used in place of the fish
